Soya beans are a crunchy, earthy flavoured pulse, with a smooth creamy texture when blended. They are a super versatile ingredient and are excellent in curries, dals and salads and can also be added to casseroles and stews.

Belonging to the legume family, the soya bean which has been important in oriental cuisine for a number of years, and the soya beans only got introduced to the western world recently where it has become more of an important protein source for vegans and vegetarians.
It is best to rehydrate the soya beans before cooking.
